Long before ghee became a wellness trend, it was made a certain way — by hand, with patience, following a rhythm passed down through generations. At Mumakhi Organics, this is the only way we know how to make it. Our Buffalo Desi Ghee follows the same Bilona method described in the Vedas, a tradition that has stayed unchanged for nearly 5,000 years. We don’t call this a “recipe.” We call it Vedic ghee, because that is exactly what it is.
Why We Refuse the Shortcut
Making ghee the traditional way takes a large quantity of milk to produce a small amount of ghee. It is slow, it is labour-intensive, and it yields far less than modern methods. This is exactly why most commercial brands quietly skip the process altogether — they make ghee directly from cream instead. It’s cheaper, faster, and gives a higher yield. But it also gives up something in return: the depth of aroma and the fullness of flavour that only comes from milk that has first become curd, and curd that has been patiently churned into butter.
We were never interested in that shortcut. We make our Buffalo Desi Ghee the long way, because we believe the long way is the only way that gives you real ghee.

How We Make Our Buffalo Desi Ghee
- Fresh Buffalo Milk
It begins with fresh milk from our own farm-raised buffaloes. - Setting the Curd
The milk is set into curd overnight using a traditional starter — the same step most commercial ghee skips entirely by going straight from cream to ghee. - Hand-Churning in Earthen Pots
In the early morning hours, the curd is poured into earthen pots and churned by hand using a traditional wooden bilona — never a machine, never an electric churner. The churning continues patiently until the butter (makhan) separates fully from the curd. - Collecting the Makhan
The white makhan that rises to the surface is carefully collected by hand. - Slow Clarification into Ghee
The makhan is then heated slowly, in stages. As it heats, the milk solids separate, foam rises, and the ghee gradually clarifies into a deep golden colour, developing its characteristic nutty aroma. - Nothing Added, Nothing Rushed
